2 to 3 Qts water
1/2 Cup Salt (Kosher salt gives a nice taste)
2 to 3 Lbs. Green Peanuts
1 Large cooking pot
Place peanuts, and salt into a large cooking pot. Add cold water into pot and cover the peanuts with water completely. Bring water up to a boil and simmer for at least 1 to 3 hours. During cooking from time to time take out 1 to 2 peanuts to check. Open shells and taste. If the peanut still has a crunch it is not done yet. When done the texture of the peanut should be soft and have a nice salty taste. If they need more salt have no fear, just turn off the heat and allow the peanuts to remain in the water for a bit longer. Also if you do have problems finding green peanuts and in a pinch I have used unsalted peanuts from the store.
After you are done for the best taste serve immediately.
