Johnny Cakes
Johnny cakes or Hoe cakes were made mostly be southern troops.  They could be made over the camp fire or your kitchen stove with ease.  Well lets get started.
2 Cups of  Yellow corn meal
1/4 All purpose flour
2 Tbsp. Sugar
1/2 Tsp. Salt
2 Tsp. Vegetable oil or lard
2/3 Cup milk (Optional)
1 Mixing bowl
1 Frying pan

Add corn meal, milk or water, salt and sugar into mixing bowl.   Mix until you have a batter close to pancake mix.  Add oil to your frying pan and place biscuit size dodgers into the hot oil.  Cook on both sides until golden brown.  For a nice touch top with a little fresh made butter and molasses for that southern touch.


     * Note:  You are cooking near an open flame as well as hot
                 oil.  Please take care in doing so.
